The second style of wine list requires no thought on our part as we ask a wine supplier to produce a list of his most popular selling wines. This option takes no account of the diversity of our guests, the menu style or indeed the variety of wines available.
The list before you is not revolutionary, merely an honest and fairly priced offering of good quality wines that represent and compliment Olivier’s cooking. I have attempted to be objective and considerate in my selection in the hope that they will entice you to try something different.
You may detect a bias towards a particular 'grape variety' in a particular region,
however, that’s where the similarity stops as each are truly individual as such demand serious inclusion.
I would make no apology for being particularly self indulgent with the inclusion of
three seriously individual wines from the Provence and the Rhône; personal favourites!
I have also included a selection of dessert wines and a couple of Port ideas
for your consideration and for those of you who may be driving; I have wines by the glass and an 'all you need to know'
explanation to units of alcohol!
I will leave you with this thought; Wine can raise passions and evoke linguistic prose of pompous proportions. There is nothing mystical about wine. As a child your taste buds have developed from the sweetness tasted on the tip of your tongue becoming desensitised through use to a mature savoury pallet. Knowledge comes from experience, so the simple solution is to indulge often; you will be surprised how much you really know.
I hope you enjoy our offering. Any tips, suggestions or criticisms you have would be welcomed.

| 60 | Domaine de Trévallon, Eloi Dürrbach, 1998 Lying on the edge of Les Alpilles, in countryside between Aix and Arles, it is here that the dynamic wine maker Eloi Dürrbach literally blasted the craggy limestone rock in order to plant his vines.Tough beginnings combined with his passion have resulted in a truly individual wine. Almost a hybrid of fine claret (Cabernet Sauvignon) and Northern Rhone (syrah) with its own distinctive Provençal twist. This is a wine of great complexity and structure with diverse flavours of blackcurrant, blackberries, spices and herbs. (12.5% ABV, 9.38 units) |

| 61 | Brézème Eugene de Maonicault, JM Lombard, 2004 To quote those who know more than I “Brézème is a viticultural oddity, of great merit, that revels in its own micro – appellation status as Brézème-Côtes du Rhône. Although technically in Southern Rhône, being south of Valence the inspirations comes from the ‘noble’ grapes of the north”. Jean-Marie Lombard is a great admirer of Cornas, hence the Syrah to produce a fairly robust, traditional Rhône with plenty of dense fruit and ample tannins. This particular wine is from the oldest vines on the estate; it is powerfully concentrated and lends itself to hearty rustic dishes.(12.5% ABV, 9.38 units)) |

In addition to offering a number of wines by the glass, I have included the units of alcohol you are likely to consume when purchasing a particular wine.
The unit of alcohol referred to here is the one defined in the UK as being 10ml of pure alcohol.
For example a 1 Litre bottle of wine with an Alcohol By Volume (ABV) of 12% would contain 12 units (1000ml x 12% ÷ 10ml of pure alcohol).
If the bottle size were 75cl, it would hold 9 units (750ml x 12% ÷ 10ml of pure alcohol).
A 175ml glass of wine would be 2.1 units of pure alcohol per glass (175ml x 12%÷ 10ml) and
a 125ml glass of wine would be 1.5 units of pure alcohol per glass (125ml x 12%÷ 10ml).
Lesson Over!!
